Recipe: Curried Leek and Carrot Soup

Summary: This is a light but filling soup that brings together the delicate flavors of both leeks and Wild Veggie Carrot.

Ingredients

  • 2 tbsp. canola oil
  • 2 c. leeks, white part, sliced thin
  • 1 tbsp. curry powder
  • 1 tsp. ginger, ground
  • 1 c. Wild Veggie Carrot
  • 2 c. vegetable broth
  • 4 tbsp. cornstarch
  • 4 tbsp. water
  • 1 tsp. salt
  • ½ tsp. white pepper

Instructions

  1. Heat oil in saucepan; then add leeks until they sweat.
  2. Add Wild Veggie Carrot, curry, ginger and vegetable broth, bring to a boil and simmer for 20 minutes.
  3. Mix cornstarch and water, and then whisk into the soup. Simmer for one minute.
  4. Season with salt and pepper to taste, and serve immediately.
